  1. 1 cup moong daal
  2. 2 bunch spinach
  3. 1 big onion finely chopped
  4. 2 tbsp chopped garlic
  5. 2 tbsp chopped ginger
  6. 1 big tomato finely chopped
  7. Handful coriander leaves
  8. to taste Salt
  9. 1 tsp red chilli powder
  10. 1 tsp turmeric powder
  11. 1/2 tsp sabzi masala
  12. 1/2 tsp garam masala
  13. 1/2 cup oil
  14. as needed Water
  15. 2 tbsp cumin seeds
  16. 1/2 tsp asafoetida
  17. 3 dried red chillies

Steps to make to make Moong Daal Palak

  1. In a wok add oil when got heat up at 1 tbsp cumin seeds. When start to splutter add chopped garlic and ginger and saute for a while then add the chopped onions and cook till the onions got transparent then add the tomatoes and mix well. Then add all the spices red chilli powder, 1/2 tsp turmeric powder, salt to taste, sabzi masala and garam masala and mix very well. Cook till the tomatoes get tender and oil oozes out.
  2. Clean, wash and cook the moong daal with salt and turmeric till completely done. Now add the cooked daal in the prepared spices and allow it to boil. Add water as needed remembering that we had to add spinach also and spinach have a lot of water in it. Clean, wash and roughly chop the spinach and coriander leaves and add to the moong daal mix.
  3. Mix those well and allow it to boil on high flame then lower the flame and cover it and cook it for 10-15 minutes. While the daal is cooking let's make tempering for it. In a pan add 1/4 cup oil to that add 1 tbsp cumin seeds and asafotida when start to splutter then add dried red chillies to it and cook it till start to give beautiful aroma and get brown in colur. Off the flame when daal is completely done.
  4. Add the tempering to the daal palak and mix well. Adjust the salt and spices and serve hot.
  5. Serve it with steam rice and sirke wali pyaz(onion vinegar) and tomato chutney or like you wish.
